Momma and Poppa Lee went out for dinner tonight. So, the Lee sisters were on their own to take care of dinner which was no biggie as we enlisted the help of good ole Chipotle. Chipotle is always bomb dot com, but we decided to go a little more bomb dot commer...with...THE SEVEN-LAYER BEAN DIP!!!!
Serves 4
1 can of pinto beans
1 yellow onion
2 cloves of garlic
2 tomatoes
1 scallion
1 avocado
2 pickled jalapenoes
juice from 1/2 lemon
cheddar cheese
sour cream
sliced black olives
1. Saute 1/2 onion diced with crushed garlic until onions become translucent.
2. Add drained can of pinto beans. Cook until soft, then smash with spatula until desired texture is achieved. Set aside.
3. Diced tomatoes and 1/2 onion and scallion. Add a pinch of salt and mix all together and set aside. This is the salsa portion.
4. Spoon out avocados and add lemon juice to your liking (I used about 1 tablespoon, but then again, I like things pretty sour). Mix with finely diced pickled jalapenos and set aside. This is the guacamole portion.
